Gluten-Free Rotini with Sauteed Summer Vegetables
Ingredients
1 box Barilla Gluten Free Rotini
1/2 red onion, diced
5 tbsp extra virgin olive oil
1 zucchini, diced
10 fava bean pods, cleared and peeled
1 pint grape tomatoes, washed
1 yellow bell pepper, toasted and diced
1/2 cup Parmigiano Reggiano, grated (optional)
6 basil leaves (torn)
salt and pepper to taste
Directions
Bring a large pot of water to a boil. Saute onion in olive oil until translucent in a large skillet over medium heat, about five minutes. Add zucchini, fava beans, grape tomatoes and yellow pepper; saute together for three minutes over high heat. Cook pasta according to package directions. Drain pasta and toss it with veggies in a large mixing bowl. Add Parmigiano Reggiano (optional) and basil before serving. Serves four.
