The Little Potato Company Helps Parents and Kids Engage in the Kitchen!

Recently, the Little Potato Company has launched a new website featuring The Little Chef Program, offering recipes and tips to help parents and kids spend time together cooking, having fun and learning new skills. When parents engage kids in the kitchen, not only will they learn to cook, but they’ll also learn math, nutrition, where food comes from, planning, social skills, family food traditions and more.

The program includes Little Chef Approved recipes, age-appropriate tasks for kids 5 to 7, 8 to 10, and 11 to 13 year olds, and an overview of the important skills they’ll learn as they progress in the kitchen. These recipes are popular not only with kids but with adults also!

Here is our favourite recipe because it’s not only an easy one-pan breakfast but can be a fun change-up for lunch or dinner.

Potato, Ham Frittata with Rocket Greens

Ingredients:
1 tbsp olive oil
1 tbsp butter
8 creamer potatoes, quartered
6 free range eggs
1/4 cup cream
1/4 cup grated cheddar
1/4 cup diced ham
1/4 cup arugula (rocket greens)

Directions: Preheat oven to 350 degrees, Heat oven-safe pan over medium high heat and add oil, butter and potatoes. Toss together and cook for 5-6 minutes until potatoes soften, In a bowl, crack eggs and add all other ingredients, except greens. Whisk well to get air into the mixture. Add the egg mixture to the pan, and continue to cook until the edges start to set (approx 1-2 minutes.). Transfer the pan to the oven for 20-25 minutes until frittata is fluffy and set in middle. Top with fresh arugula and serve.
