Celebrate National Salad Month with Marzetti Simply Salad Dressings

Tired of plain leafy greens? With May being National Salad Month here are a couple of healthy salad recipes that you can serve up and enjoy all year round. They are made with simple and pure ingredients such as extra virgin olive oil, sea salt and canola oil.

Crunchy, sweet and savory. This delicious salad has it all. Just combine Simply Dressed Balsamic Salad Dressing with chicken, Granny Smith apples, celery, dates, pecans, cabbage and salad greens.

Ingredients
1/2 cup  Simply Dressed Balsamic Salad Dressing
1/2 cup pecans
2 cups shredded cooked chicken meat
1 large Granny Smith apple, diced
1/2 cup chopped celery
1/2 cup chopped dates or favorite fruit
2 cups chopped cabbage
4 cups mixed salad greens
1/4 cup peels of aged white cheddar cheese
salt and pepper to taste

Preparation
Preheat oven to 350 degrees F. Place nuts on a baking pan and bake 5 to 7 minutes or until nuts are toasted. Cool and chop. In a large bowl, combine Simply Dressed Balsamic Salad Dressing, chicken, apples, celery, dates, pecans and salt and pepper. Add cabbage and salad greens and gently toss. Top salad with cheese and serve.

Bulgur wheat tossed in Simply Dressed Pomegranate Dressing adds hearty goodness to a salad of chopped spinach, crumbled feta, mint, scallions and dried apricots.

Ingredients
3/4 cup  Simply Dressed Pomegranate Dressing
1 cup bulgur wheat
1 1/2 cups boiling water
1/2 cup almond slivers
1/2 cup dried apricots, diced into 1/4-inch pieces
4 scallions, chopped
1/2 cup chopped mint
5 oz. chopped spinach
4 oz. crumbled feta or halloumi cheese
1/2 cup pomegranate seeds or dried cranberries
Salt and pepper

Preparation
Place the bulgur wheat in a bowl and pour the boiling water over it. Cover with plastic wrap and allow to stand at room temperature for 1 hour. Preheat the oven to 350°F. Place almonds on a baking pan and bake 5 to 7 minutes or until nuts are golden brown. Cool. Remove plastic wrap and fluff the bulgur wheat with a fork. Pour 1/2 cup Simply Dressed Pomegranate Dressing over bulgur wheat and mix. Season with salt and pepper to taste. Add almonds and all remaining ingredients to the bulgur wheat. Drizzle the remaining 1/4 cup of dressing over all and gently toss. Serve.
